I’d have to say I don’t even like pumpkin very much–like I have no use for pumpkin pie-but if it’s baked in something, like bread or cake, I can eat it. But this cake is great! I tried it by chance when one of my day care families brought some to share. It’s pretty loaded though…
2 cans of pumpkin
3 cups evaporated milk
2 tsp cinnamon
1 tsp ginger
1 yellow cake mix
1cup chopped pecans
4 eggs, well beaten
1 1/2 cup sugar
1 tsp salt
1/2 tsp cloves
1 stick of butter, melted
Mix pumpkin, milk, cinnamon, ginger, eggs, sugar, salt and cloves together well. Pour into greased and floured 9×13 pan.
Sprinkle with (dry) cake mix, drizzle with melted butter, then sprinkle with pecans. Bake at 350 degrees for 1 hour and 20 mins.
