If you love carrot cake you’re sure to like these M&M’s® Carrot Cake Monster Cookies! They are a combination of carrot cake flavor and white chocolate in a chewy, oatmeal monster cookie. The festive M&M’s® Carrot Cake colors and flavor make them a perfect homemade treat for your Easter celebration!
And they’re slightly healthy (okay, not really) because this recipe uses a special ingredient – pureed carrot! Don’t worry, it’s really yummy. It makes the cookies moist – no chance of Carrot Cake Monster Cookies being dry!
Prepare carrots: peel and microwave until soft. Puree in food processor. In a large bowl, combine the peanut butter with the sugars and butter. Use an electric mixer to mix until well combined. Mix in the eggs and vanilla. Mix in carrot puree. Mix in the oats and baking soda. Then stir in the chips and M&M’S®.
Drop the cookies by heaping spoonfuls onto the prepared cookie sheets. Bake 10 to 12 minutes. Yum!
