I teach my child care children about Earth Day too, by picking up trash around the neighborhood, making Earth projects, planting seeds and teaching them about what items can be recycled. This year, celebrate with a healthy new salad recipe!

To make the Greek Yogurt Chicken salad:
Bring a pot of salted water to a boil. Add the chicken and poach until cooked through, about 15 minutes. Remove from the water and let rest on a cutting board for 5 minutes. Rough chop the chicken and put in a bowl and refrigerate it for a few minutes to cool.

After the chicken is cooled, add the yogurt, grapes, apple, celery and onion. Add salt and pepper. Mix to combine. If desired, add a tablespoon or two of the prepared poppy seed dressing. I like the tang the dressing adds!
Arrange mixed greens on a plate. Top with chicken salad mixture and garnish with candied pecans and cranberries if desired.

This chicken salad looks SO good. We follow the Dirty Dozen and don't eat those twelve items unless they are organic, so it helps to have a great grocery store that has a fabulous organic selection! I love the idea of the Poppy Seed dressing in the chicken mix, and I love that you used freshly cooked rather than canned chicken. YUM! #client
