Groundhog Day Pudding Cups

It’s a silly little “holiday” but everyone wants to know – did the groundhog see it’s shadow?? I find it bit bizarre that we follow this folklore of a critter coming out of it’s hibernation to determine if we’ll have another 6 weeks of winter or not.  That tells you how long winter can seem in some areas! It’s been a while since we’ve seen the sun. Lots of dreary, gray January days in Wisconsin. So we may as well celebrate and make groundhog day pudding cups!

Here are the ingredients and directions for making a cute little treat. Kids can help make them too.

Ingredients:

  • Nutter Butter Cookies
  • 4 Chocolate Pudding Cups
  • 1 cup Coconut
  • Brown M&M’s
  • Candy Eyes
  • Marshmallow Bits
  • Green Food Coloring

Groundhog Day Pudding Cups ingredients

Pour coconut into a bowl and add 4-5 drops of green food coloring. Mix well.

Open one Nutter Butter Cookie and use the inside peanut butter as your “glue”.

Spread a little bit of “glue” on the back of the eyes, nose (M&M’s), and teeth (marshmallow bits). Press on cookie.

Now, take some M&M’s and cut in half with a knife. These will become the ears. Take a little of the “glue” and spread on the bottom of the M&M and place on top of the cookie.

Open up pudding cups and place the groundhogs in, then sprinkle the green coconut around the front and back of it.

Ingredients
