Strawberry Banana Overnight Oats

It seems to me that if I start out my day eating well, I feel better and eat better the rest of the day. Oatmeal along with fresh fruit is a wonderful way to start the day. You’ll be glad to reach for this morning treat that’s already prepped and ready to go on your way out the door.

Ingredients

  • 1 cup oats (regular not instant)
  • 1.5 cups almond milk
  • 3 tablespoons chia seeds
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 6 strawberries, sliced
  • 1 banana, sliced
  • 2 tablespoons almond butter
  • 2 tablespoons raw cacao chips

Directions

  1. In a large bowl, combine the oats, almond milk, chia seeds, vanilla, and syrup.
  2. Mix well until everything is combined.
  3. Let sit overnight (or for at least four hours) in the fridge.
  4. In the morning, chop the berries and bananas.
  5. Portion the oatmeal mixture into bowls/jars.
  6. Mix in the almond butter and top with the berries, banana, and cacao. Serve cold and enjoy!

In a rush? Pre-portion everything the night before. Combine the first five ingredients and mix well. Portion into two mason jars and layer with almond butter, berries, banana, and cacao. Let sit in the fridge overnight and grab on the way out the door!
