Have you tried Eggroll In a Bowl yet? If so, you know how yummy it is! Maybe you haven’t yet so I encourage you to try it. Honestly, I don’t care much about eating an eggroll, but I do like it “in a bowl” because it’s so filling and healthy to eat. It’s easy to make and makes a large amount so you have leftovers for a quick meal or on the go lunch. Eggroll In A Bowl has been made popular with low-carb diets like Trim Healthy Mama. You can make it with or without the mushrooms. I like them but if you don’t, it’s no big deal to leave them out.
Eggroll In A Bowl
Ingredients
- 1 pound ground turkey
- 10 oz package of pre-shredded coleslaw mix
- 8 oz package of sliced mushrooms
- 1/2 onion, sliced
- 1 tbsp ginger
- 1 tbsp minced garlic
- soy sauce to taste
- green onion, chopped
Directions
Brown the turkey with the sliced onions and minced garlic. Add in the coleslaw, ginger, soy sauce and mushrooms. Saute until tender. Garnish with green onions.
I try to not overcook it, especially if I will have leftovers to warm up for another day.
